About Me

My name is Conor Gibbons, from County Donegal in the northwest of Ireland. Since 2019, I’ve been living in Dubai, where I have worked as a primary school teacher.

During the various lockdowns of 2020 while living in the Al Warqa area of Dubai, the daily routine of grinding and brewing a fresh cup of coffee from my apartment gave a sense of routine and purpose to the day. It was from these days where a want to develop a brand of specialty coffee of my own was formed.

After many months of learning more about the art of speciality coffee, from sourcing beans, roast profiles, and packaging, The Hills Coffee journey was ready to get started, and launched in November of 2021.

While the journey of The Hills Coffee began and continues in Dubai, the plan is that someday it will take roots in Co. Donegal, Ireland in the future.
