Story so far...

My name is Conor Gibbons and I come from Co. Donegal, in the Northwest of Ireland. Since 2019, however, I have been enjoying a different pace of life in Dubai where I am currently working as a primary school teacher.

During the various lockdowns of 2020, the daily routine of grinding and brewing a fresh cup of coffee from my apartment often gave a sense of routine and purpose to the day. My enjoyment of a simple cup developed into an understanding of the culture that surrounds coffee and then a want to develop a flavour experience of my own. 

It was some time after this that I came to know Sam Harkous, an established coffee roaster, in the Al Quoz area of Dubai. Under his guidance and expertise, I learned the process of sourcing specialty coffee beans, roasting and delivering a finished product. After many hours of tasting and careful selection, I am delighted to introduce my first two coffees to the market.

While the journey of The Hills Coffee begins in Dubai, the plan is that someday it will take roots in Co. Donegal, Ireland in the future...much like myself. I hope that you enjoy each of the carefully selected roasts and take as much enjoyment from each cup as I do.
